I, Juliana Turchetti, am the founder and owner of Aviatori Coffe House.
I’m a brazilian-italian aviatrix, with experience as flight instructor, airline pilot, agricultural and ferry pilot.
Growing up in Brazil , specially in Minas Gerais state, gave me easy access to one of the best coffee beans in the world and I never thought much about it until I started traveling around the globe.
I remember the first time I was in Canada and got some coffee at the grocery store. When I brewed it and tasted it my first thought was: “ this is not coffee!”.
In 2017, when I moved to the US, I made sure to bring my own roasted coffee beans from my homeland.
And from there, the green beans to be home roasted.
After moving to Havana/IL I started selling coffee drinks and coffee bags at the Farmers Market.
Working as an agricultural pilot and ferry pilot, gives me the opportunity to have a considerable amount of free time during the off season.
So I decided that I wanted to dedicate this time to something that I love as much as aviation: COFFEE!
That’s how Aviatori started. I was looking for a location and came across this beautiful 1909 house.
This building was previously owned by Tony Leone, an American- Italian gentleman that had the dream of opening a Café in this same house, where his grandfather used to live and raised his family. Unfortunately Tony passed away and didn’t have time to fulfill his dream.In addition to our Italian background we had this “coffee dream” in common.
So now, I am not just making my dream come true but also honoring his vision and memory.

The coffee beans
At Aviatori we serve only specialty coffee and this means that our beans are selected after scoring above 80 points on a 100 point scale. Speciality coffee is grown at high altitudes, with much care and attention from the farmer. From there, it is sold at a premium to coffee traders, or direct to roasters.
The Cerrado, is a vast tropical savanna ecoregion of Brazil, particularly in the states of Goiás, Mato Grosso do Sul, Mato Grosso, Tocantins, Minas Gerais and the Federal District.The main habitat types of the Cerrado consist of forest savanna, wooded savanna, park savanna and gramineous-woody savanna. The second largest of Brazil’s major habitat types, after the Amazonian rainforest, the Cerrado accounts for a full 21%of the country’s land area (extending marginally into Paraguay and Bolivia).
I was born in this beautiful exotic area, more precisely in the Minas Gerais state. Traveling through the west side of the state, you can see the vast coffee crops that grow in the high altitudes that reach 3,300 ft.
From a small tent at the Farmers Market to the Land of Lincoln.
The cultural exchanging, the opportunity to know and talk with different people and the possibility of dreaming higher has been an incredible time for me.
